Ingredients:

• Green chillies: 100 grams

• Garlic cloves: 15–20

• Roasted peanuts (without skin): 50 grams

• Cumin seeds: 1 teaspoon

• Salt: To taste

• Oil: 2–3 tablespoons

Preparation Method:

1. Prepare the Chillies:

Wash and dry the green chillies thoroughly, then remove the stems and cut them into three pieces each. You can choose either spicy or mild chillies, depending on your preference.

2. Cook the Ingredients:

Heat oil in a pan and add cumin seeds. Once they start to crackle, add the garlic cloves and sauté them. Before the garlic turns golden brown, add the chopped green chillies and cook for 3–4 minutes on medium flame until they soften slightly.

3. Add the Peanuts:

Once the chillies start softening, add the roasted peanuts and cook for another 1–2 minutes. Lower the flame, add salt, and cook without covering the pan.

4. Cool and Grind:

Turn off the flame and let the mixture cool slightly. Once cooled, grind it coarsely using a traditional mortar and pestle or a sil-batta. If neither is available, pulse the mixture in a blender for 4–5 seconds to achieve a coarse texture.

Your Kolhapuri Thecha is ready to serve! Pair it with any meal to add a burst of flavour.
