You can prepare this soup easily at home with common household vegetables making up for most of the base. This recipe will help you pack nutrients, antioxidants, and iron along with comfort to your taste buds. Without further ado, let’s dive into the recipe.

Beetroot Vegetable Soup Ingredients:

  • 1 or 2 Beetroots
  • 1 or 2 Onions
  • 4 to 5 drumsticks
  • 2-3 garlic cloves
  • Fresh green beans
  • 2 to 3tsps ghee
  • Jeera
  • 5 to 6 curry leaves
  • Lemon juice
  • Chopped coriander

Method;

  1. Chop beetroot, onion, drumsticks and green beans and add to a pressure cooker with some water, garlic cloves and salt.
  2. Boil the vegetables for roughly 4 to 5 whistles. Thereafter, take out the drumsticks and scrape out the pulp from the skin.
  3. Add the drumstick pulp and boiled vegetable to a blender and make a smooth paste.
  4. Add ghee to a pan, followed by jeera and curry leaves. You can also some other raw spices, such as clove and cardamom, if you want. After the spices cook, add the vegetable puree and cook for 8-10 minutes.
  5. For the final boost of flavour, add a pinch of pepper and lemon juice and garnish with a handful of coriander leaves.

This nutrient-dense vegetable will be ready in minutes. You can pair this with bread or rice and even enjoy it as it is. The best part of this recipe is that it is easy to cook and can be changed based on your taste and requirements. Instead of drumsticks, you may add carrots or tomatoes as well.
