APPETIZER
Dough Balls
PizzaExpress signature Hot and crispy Baked dough ball served with butter.
Cooking time- 45 min
Serve2-3 People
Ingredients:
Dough Making
- Flour – 1kg
- Salt – 20gm
- Sugar – 10gm
- Yeast- 30gm
- Oil- 10ml
- Water as per requirement
Cooking Instructions:
- Weigh All the ingredients
- Take a bowl add all ingredients mix together
- Add water as per requirement and make a proper dough.
- Make 200gm ball of Dough.
Ingredients:
- Dough Ball
- Dough Ball 1 No
- Flour if neccesary.
Cooking Instructions:
- Place dough upside down on work surface
- The surface must be dry and free of flour
- Gently flatten the dough ball. If necessary add flour on surface.
- Fold the dough to form a ‘sausage’ shape
- Use pressure to seal the dough. Allow to relax for 2 minutes
- Roll out the dough on the work surface under palm of hands using a ‘back and forth’ motion. Apply pressure.
- If dough is too moist sprinkle with a little flour. Stop rolling when the dough is 36cms.
- Cut the rolled-out dough in half (straight down the middle).
- Cut each half in half. Repeat the process till you have 16 pieces (Dough Balls).
- Place in a pan for proving (8 Pcs in each Pan)
- Prove the dough ball for 30 min
Ingredients:

- Prove Dough Ball – 8 Pcs
- Butter – 40gm
Cooking Instructions: Cook the dough ball for 5 min at 371*C
Place in a plate serve with butter
MAIN COURSE
Calabrese Pizza
Cooking time: 45 min
Serves: 2-3 People
Ingredients: Dough Making
- Flour – 1kg
- Salt – 20gm
- Sugar- 10gm
- Yeast – 30gm
- Oil – 10ml
- Water as per requirement

- Weigh All the ingredients
- Take a bowl add all ingredients mix together

Ingredients: Calabrese Pizza
- Rectangular pizza Base – 1 No
- Tomato sauce – 100gm
- Mozzarella – 60gm
- Chopped Red Chilly – 2 Pinch
- Jalapenos – 12 PcsRoasted Pepper – 30g
- Emilgrana – 1 Tbs
- Chargrilled Vegetable – 80g
- Black Olives – 10no
- Oregano – Pinch
- Salt – Pinch
Garnish
- Baby Mozzarella – Half ball
- Basil Pesto – 2 drizzled
- Emilgrana – 1 Tbsp
- Rocket – 1/2 cup
Cooking Instructions:
- Take Pizza Base.
- Spread the tomato sauce evenly.
- Add the mozzarella.
- Distribute the fresh red chilly.
- Scatter the Jalapenos.
- Scatter the roasted pepper.
- Scatter the chargrilled Vegetable.
- Add Black Olives.
- Sprinkle emilgrana on the pizza.
- Season with Oregano & Salt.
Garnish with Baby mozzarella, grated emilgrana, rocket toss with basil pesto.
DESSERT
Raspberry Cheesecake
Cooking time – 2 Hours 30 Min
Serves – 10-12 People
Ingredients:
Base
- Digestive Biscuits – 1 Cup
- Brown Sugar – 2 tbsP
- Butter- 1/2 Cup
Batter
- Cream Cheese – 4 Cup
- Flour – 1/2 Cup
- Sugar – 1.5 Cup
- Egg Yolk- 1 Cup
- Vanilla Essence- 1 tbsp
- Whipping Cream – 1.5 Cup
- Raspberry Puree – 1 cup
Cooking Instructions:
- Melt butter for 2-3 minutes.
- Mix until Butter melts.
- Break biscuits into smaller pieces with hands.
- Pour melted butter into the mix
- Add sugar
- Mix well with the spoon
- Pour the mix in the tin and flatten with a spoon
- Cook 5 to 7 min at 150*C.
- Take cream & Beat it until it become smooth.
- Add Sugar & Flour & Mix it.
- Use spatula to scrape the bowl.
- Add 1/2 cup Raspberry puree & Mix.
- Add Egg Yolk and Vanilla essence.
- Slowly add cream until mixed properly.
- Mix on medium speed.
- Grease sides of baking tray with butter
- Place whole mixture into baking tray
- Add balance 1/2 cup raspberry puree on top.
- Take a Skewer & swirl zigzag line on coolie drop.
- Bake it for 120 minutes at 150*C.
- Remove From oven.
- Cool it down.
