Mango Bhapa Doi: Here’s How To Prepare
First, place a strainer or sieve in a large bowl and cover it with a muslin cloth to drain the water from the curd. Now, wrap it in a cloth, and press it with a heavy object. Then keep it in the refrigerator for 4 to 5 hours. In this manner, the perfect thick curd is prepared.
In the mixer, prepare a mango pulp paste and mix it well with the curd. Also, mix in the condensed milk and cardamom powder to make a perfect batter. Place this mixture in a greased baking tray and cover with butter paper.
Now take an idli container with a lower vessel filled with water and an upper vessel with little holes. Place a baking tin on top of this vessel and tightly seal it with foil paper. Now, let it steam for 20 minutes.
Once steamed, refrigerate for 3 hours. Then, take it from the fridge and place it on a platter, turning it upside down. Now garnish with mango cubes and dry fruits and serve chill.
