Ingredients

  • 2 boiled potatoes (mashed)
  • ½ cup carrots (grated)
  • ½ cup beans (finely chopped)
  • ½ cup green peas (boiled)
  • ½ cup capsicum (finely chopped)
  • 1 small onion (finely chopped)
  • ½ teaspoon garam masala
  • ½ teaspoon chaat masala
  • ½ teaspoon red chilli powder
  • ½ teaspoon coriander powder
  • ½ teaspoon cumin powder
  • ½ teaspoon ginger-garlic paste
  • ¼ teaspoon black pepper
  • Salt to taste
  • 2 tablespoons cornflour or gram flour (for binding)
  • 2 tablespoons breadcrumbs (for crispiness)
  • 1 tablespoon lemon juice
  • 2 tablespoons coriander leaves (finely chopped)
  • Oil (for frying)

Recipe

  1. Mash the boiled potatoes and set them aside.
  2. Heat some oil in a pan, add ginger-garlic paste and onions, and sauté until fragrant.
  3. Add carrots, beans, green peas, and capsicum. Saute for 5-7 minutes until the vegetables soften.
  4. Add garam masala, chaat masala, red chilli powder, coriander powder, cumin powder, and salt. Mix well. Add lemon juice and coriander leaves for freshness.
  5. Stir in the cornflour and breadcrumbs to form a firm dough. Shape the mixture into oval or rectangular cutlets to resemble the traditional railway-style cutlets.
  6. In a bowl, mix flour, cornflour, black pepper, and some water to make a thin batter.
  7. Dip each cutlet in the batter, then coat it with breadcrumbs for extra crispiness.
  8. Heat oil in a pan and fry the cutlets until golden brown and crispy.

Serve hot with tomato sauce, green chutney, or mustard chutney.
