Here’s the recipe for Schezwan Roti Noodles, a fusion dish combining the flavours of Schezwan sauce with roti and vegetables.
Schezwan Roti Noodles Recipe
This unique recipe is made with thinly sliced leftover chapatis.
Ingredients:
2 tablespoon oil
1 cabbage (thinly sliced)
1 teaspoon garlic, minced
1 teaspoon ginger, minced
1 small onion, finely chopped
1 small bell pepper, sliced
1 medium carrot, julienned
2-3 green chilies, sliced (adjust to taste)
2-3 tablespoons Schezwan sauce (adjust to taste)
2 tablespoons soy sauce
Black pepper
Salt to taste
1 tablespoon chopped spring onions (for garnish)
4-5 rotis (Indian flatbreads), cut into strips
Method
First, heat 1 tablespoon of oil in a pan over medium heat. Add the cut roti strips and fry them until they become crispy and golden brown. Remove and set aside on paper towels to drain excess oil.
For the vegies
Heat 1 tablespoon of oil in a large pan or wok over medium heat.
Add minced garlic and ginger, and sauté for about 30 seconds until fragrant.
Add the chopped onion, cabbage and cook until it turns translucent.
Add the sliced bell pepper, carrot, and green chilies.
Stir-fry for a few minutes until the vegetables are slightly tender but still crisp.
Add the Schezwan sauce and soy sauce and stir well to coat the vegetables.
Season with salt and black pepper to taste and stir-fry for another 2-3 minutes.
Garnish and Serve
Garnish with chopped spring onions. Serve hot and enjoy your Schezwan Roti Noodles.
