Roast Turkey recipe by Chef Daya Shanker Chaubey, Executive Chef, Courtyard by Marriott Aravali Resort
Ingredients
- 1 whole turkey
- Salt to taste
- 100g aromatic vegetables (carrot, celery, onion)
- 100g fresh herbs (thyme, parsley, marjoram)
- 500g butter
- 200ml olive oil
- 2 tbsp Dijon mustard
- 2 tbsp honey
Brine
- Orange, star anise, peppercorns, cinnamon stick
Method
- Brine: Rinse turkey and brine with spices overnight.
- Marinate: Rub turkey with mustard, honey, and thyme. Refrigerate overnight.
- Prepare: Preheat oven to 160°C. Place vegetables and turkey in a roasting pan.
- Roast: Rub turkey with olive oil and herbs. Roast covered for 4 hours at 120°C. Uncover and increase to 180°C for 8 minutes.
- Serve: Check with a meat thermometer to ensure readiness before carving.
